WHere is a simplified version of a drink from a new menu. It's a large-volume prepared mix that's bursting with tastes of the holiday season, making it ideal for hosting a festive gathering. Save the extra cordial for breakfast cocktails, puddings, or for more rounds of this cocktail.
The Bikini Cocktail
Yields 10 guests
For the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Cordial: Put all the ingredients inside a pan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, remove from the stove and leave to cool down fully. Transfer into an clean bottle, close it and store in the refrigerator, it can be stored for about four weeks.
Preparing the Cocktail Base: Pour every spirits and syrup into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml of your cocktail base to a mixing glass containing ice, and stir gently for about 60 seconds to chill. Filter to a chilled martini glass or equivalent, decorate with the cranberries adding the final touch by giving it a light spray with the mandarin essence over the drink.
